This pottery is absorbent, so its texture will change with the moisture and oils from your food. Because it is prone to staining, we recommend avoiding strongly colored dishes until the surface is well-seasoned with oil. The piece will develop more character with use, and we hope you enjoy this evolution. If you are concerned about staining, try soaking the piece in water for about 10 minutes before use. This will help prevent staining and odors to some extent, allowing it to "mature" gradually.
