This pottery is absorbent, so its texture will change with the moisture and oil from food. It is prone to staining, so we recommend avoiding intensely colored dishes until the oil has fully permeated the entire surface. As you use it, it will develop more character, and we hope you enjoy this transformation. If you are concerned, try soaking it in water for about 10 minutes before use. This will help prevent staining and odors to some extent, and allow it to gradually develop.
