This ceramic is absorbent, so its texture will change with moisture and oil from food. Since it is prone to staining, we recommend avoiding dark-colored dishes until the oil has fully permeated the entire piece. The more you use it, the more character it develops, and we hope you enjoy this change. If you are concerned, try soaking it in water for about 10 minutes before use. This will help prevent staining and odors to some extent, and it will gradually develop.
